A dish with pasta and bacon is sure to please even the pickiest of eaters. It's so good, yet so effortless to make. Tomatoes and peas add color to this tasty dish.
Ingredients
1 package Louisa Cheese Tortellini
5 slices bacon, cut into 1" pieces
⅓ cup onions, chopped
4 Roma tomatoes, seeded and diced
½ cup sweet green peas (fresh or frozen)
1 cup heavy whipping cream
1 tsp. salt
½ tsp ground black pepper
1 tbsp. olive oil
Parmesan cheese, freshly grated to taste
Directions
Heat large covered saucepot of unsalted water to boiling over high heat. Add Louisa Cheese Tortellini; stir gently. Reduce heat to medium and cook, uncovered, 5 minutes. Drain and set aside.
Meanwhile, in a large skillet, sauté bacon. When bacon starts crisping up, add onion and cook on low until soft.
Add tomatoes, peas and sauté briefly. Add cream and bring to a simmer. Season with salt and pepper.
Add tortellini to the skillet and gently toss with sauce and Parmesan cheese.
Simmer until sauce slightly thickens up (approx. 1min).
