Cheese lovers rejoice! Louisa Four Cheese Ravioli is amped up with cheddar cheese and bacon. This dish can be summed up in one word – Delish!
Ingredients
24 Louisa Cheese Ravioli
4 strips bacon (diced), reserve 3 tbsp. bacon fat
3 tbsp. flour
1½ cup half & half
½ onion, whole
1 bay leaf
Salt and pepper, to taste
1 cup sharp cheddar cheese, shredded
1½ tsp. cream cheese
Parmesan cheese, grated, to taste
Directions
In large covered saucepot over high heat bring 4 quarts unsalted water to boiling. Add Louisa Cheese Ravioli; stir gently. Reduce heat to medium and cook, uncovered, 5 minutes. Drain and set aside.
Cook bacon and dice. Reserve 3 tbsp. of bacon fat.
Make a roux. In a bowl whisk bacon fat with and flour until flour clumps dissolve and mixture is thick and smooth.
In a saucepot steep the aromatics (onion and bay leaf) and cayenne pepper in half & half on low heat. Allow simmering briefly, then remove aromatics and thicken sauce with some of the roux.
Slowly incorporate cheddar and cream cheese. Season, adjust consistency and plate with diced bacon and parmesan cheese.
