Toasted Sausage & Cheese Ravioli with Roasted Pepper and Onion Jam
Roasted red peppers, onions and garlic come together in perfect harmony to create a jam that complements savory toasted sausage & cheese ravioli. While the flavor is sophisticated, it couldn't be any easier to make.
1 package Louisa Toasted Sausage & Cheese Ravioli
1 cup roasted red peppers from jar, drained
½ cup onions, diced
2 tsp. red wine vinegar
1 large garlic clove, peeled
4 tbsp. extra-virgin olive oil, divided
Parsley and Parmesan cheese, freshly grated, for garnish
Salt and pepper, to taste
Prepare toasted ravioli according to package directions.
In a skillet sauté onions with 2 tbsp. of olive oil until caramelized.
Combine roasted peppers, sautéed onions, vinegar, and garlic in a food processor; process to coarse puree. With machine running, pour olive oil and process until puree thickens slightly. Season with salt & pepper. Transfer to small bowl.
Plate toasted ravioli. Serve jam in a separate bowl.
